Sunday Sustenance: Chocolate Quinoa Oatmeal Pancakes
One of my favorite meals on a Sunday morning is pancakes.
A great meal of pancakes can be made even better when combined with one of my other favorite foods - chocolate!
The following is a recipe I put together by trial and erorr. It is fairly high calorie, but has a lot of nutritional punch, and if I do say so myself, is quite yummy.
Chocolate Quinoa Oatmeal Pancakes
Ingredients:
- 1 cup pre-washed quinoa (soaked overnight)
- 1 ripe banana
- 1 1/2 cups old-fashioned oatmeal
- 1/2 cup egg substitute or 2 eggs
- 1/2 cup milk (I use Rice Dream)
- 1/4 cup wheat germ
- 1/2 tsp salt
- 1 Tbsp cinnamon
- 1 Tbsp Chocolate protein powder
- 1 - 2 cups water as needed to mix
Directions:
*If you’ve never used quinoa before, please don’t underestimate the importance of washing it thoroughly.
Place all ingredients in a blender. Mix until batter is smooth, adding water as needed.
Cook in whatever pan you like to use for pancakes.
Depending on the size of pancakes you like, this recipe makes roughly 4 servings of 4 pancakes.

That sounds so good — and healthy! I love chocolate and I love pancakes! I’ve never used quinoa before, though. When you soak it, do you leave it in the fridge?
